This chinese soup recipe shows you how to cook soup in the winter melon.
Ingredients:
Winter melon 1
Chicken 100 gram
Dried chinese mushroom 3
Shrimp 100 gram
Scallops 100 gram
Bamboo shoot 1
Red dates 5
Dried oyster 4
Dried scallop 6
Seasonings:
Salt 1 tablespoon
Method:
1. Scrub the winter melon clean. Cut off the top and scoop out the seeds. Place on a plate, cut side facing upwards.
2. Bring water in the steamer to a boil. Steam the winter melon over high heat for 15 minutes until 60% soft.
3. Cook chicken in boiling water, tear into shreds. Reserve the cooking liquid.
4. Soak mushrooms until soft. Remove stems and cut into dices.
5. Peel bamboo shoot and cook in boiling water. Cut into dices.
6. Cook shrimps and scallops in boiling water.
7. Rinse red dates, dried oysters and dried scallops.
8. Add all ingredients and chicken cooking liquid and seasonings into the winter melon. Steam for another 40 minutes.
Preparation time: 15 minutes
Cooking time : 40 minutes
Choose a winter melon with a heavy bottom so that it will not topple over during cooking. You can scoop out the flesh of winter melon to serve with other ingredients.
