Steamed Chawanmushi recipe

This egg dish is delicious and easy to cook.

Egg                   4
Chicken meat   100 gram
Prawn               2
Bonito flake      1 tablespoon

Salt                 1/2 tablespoon
Water             1/2 tablespoon
Potato starch  1 tablespoon

1. Bring water to a boil, turn off the heat and add the bonito flakes. Once the bonito flakes sink to the bottom, remove and strain the stock. Leave to cook. Cut chicken into slices, add Marinade. Set aside for 10 minutes. Scald the chicken meat in boiling water then remove. Shell the prawn, leave the tail intact.

2. Beat eggs with a dash of salt. Add double amount of stock, pour mixture into small bowls.

3. Add chicken and prawn. Cover with aluminiun foil.

4. Bring water in the steamer to a boil. Steam eggs over low heat for 20 minutes until the eggs are completely set.

Preparation time: 10 minutes
Cooking time      : 20 minutes
